  3. i love wonton noodle soup, if you buy wonton wrappers (we get them from asian grocery stores) then are fast to make since you only have to mix the fillings, and you can make a large amount in one setting.

  4. On hot summer nights a pasta salad is good. You can add bits of any kinds of leftover veggies or meats or beans and vary it with different dressings and pasta shapes.

  6. OMG, B! I live and die by my CROCK POT! I have so many favorite recipes, I couldn't even begin to pick one. I run four crock pots on Sundays and then all I have to do is re-heat during the week! LOVE IT! My favorite, recently, though, has been just making seasoned (taco, lemon-pepper, herb, etc.) chicken in the crockpot - cook chicken breasts for about 45 minutes, then shred, then put back in and finish cooking (all on low). Then, I have shredded chicken for the week to throw into soups, salad, sandwiches, or casseroles. SO handy! :) jenbaumgarten@yahoo.com

  7. Here's a way you can cook once and have the meat cooked for 4 (or more) different chicken entrees. Get a large pack of chicken (any parts you desire). If you prefer, skin the chicken. Spray a baking pan with non-stick cooking spray for each flavor of chicken you are preparing. Place the appropriate pieces of chicken for your family in each pan. Here's the twist: you flavor each pan of chicken differently. You could roll one set in Italian bread crumbs, and another set in panko bread crumbs. Another pan's chicken could be brushed with BBQ sauce, the fourth pan's chicken is covered with Italian salad dressing, and the 5th pan's chicken is covered with with teriyaki sauce, etc. Use whatever favorite sauces you like! After baking the pans of chicken in the oven, let them cool and then cut the chicken up, if you like. Some chicken can be chopped, others cut in strips, and you can leave some on the bone. Wrap each style individually and refrigerate or freeze chicken until you are ready to use it. The chicken can be used by itself as an entree, or in a garden or a pasta salad. It can be used mixed with rice, veggies, noodles, etc. The only limit is your imagination. It doesn't get any easier than this unless someone is treating you to dinner in a restaurant! Enjoy!

  18. I am OBSESSED with my slow cooker this summer. Earlier this week, I made super easy, super delicous shredded chicken tacos.

The evening before I threw 3 boneless, skinned chicken breasts, a half a cup of salsa, half an onion (sliced), a jalapeno pepper (chopped), and a pack of taco seasoning in the slow cooker. I let them marinate in the refrigerator overnight, and then before I left for work the next morning, I set it to cook for 8 hours on the lowest setting.

Serve on warmed corn tortillas with cilantro and diced onions (and whatever fixins you can dream up).

    Soooo good!

  19. One very quick meal that we use in our house, and the kids like too is called Easy lasagna.
All you need is a bag of frozen ravioli of your choice, a bag of mozzarella cheese, and a jar of spaghetti sauce.
In a 9X13 pan place one layer of ravioli, half of the sauce, half of the cheese, repeat with another layer of ravioli, rest of cheese, rest of sauze and place in the oven for 45 min at 350 or until sauce starts to bubble on sides. And I usually put tin foil on top so the cheese doesn't brown.
Everyone likes it in our house and it is super easy to throw together!

  23. I like to make Monte Cristos. Just slice french bread butter one side and place that side down on a cookie sheet, add some sliced ham, a slice or two of tomato (fresh from the garden are best) and then a slice or two of provolone cheese. Put them under the broiler in the oven until cheese starts to brown.

  24. This is a simple summer recipe to use the fresh tomatoes and cucumbers from the garden. Mix couscous, chopped cucumbers and cherry tomatoes with dijon mustard and a bit of balsamic vinegar. Eat cold like a pasta salad. Also yummy with some crumbled feta. Super tasty and fresh.

  28. We like homemade "alfredo" sauce with pasta for a very quick easy meal. We just boil noodles, drain, return to pan add a bit of butter, cream and shredded parmesan cheese. I usually put in a little minced garlic and pepper.

  29. I like to make a quick quiche for a quick dinner. Instead of pie crust you can cube up stale crusty bread. Lay that down in the pie pan. Whip up eggs with some milk and cheese/meat/veggies of choice. Pour over the bread and bake about 20 minutes or until firm. I use a smaller baking pan that fits in my toaster oven so that I don't have to heat up my house in the summer!

  34. My go to meal this summer has been a thick slice of cornbread with a green chili on top and then smothered in monterey jack cheese, broil for a few minutes. Yum! My kids sometimes like a hint of sweetness if the green chili happens to be more on the hot side rather than on the mild side and drizzle a little honey or maple syrup on top.
